Gluten Free Apple Cinnamon Muffins

Delicious and moist, chunks of Apple and a cinnamon crumble on top.

Ingredients
  

  • 1 1/2 Cups Unsweetened Apple Sauce
  • 1/3 Cup Butter melted
  • 2 Eggs
  • 1/2 Cup Honey
  • 1/4 Teaspoon Salt
  • 1 1/2 Cups Gluten Free Flour
  • 1 Teaspoons Baking powder
  • 1/2 Teaspoons Baking Soda
  • 1 Tablespoons Cinnamon
  • 1/4 Cup Brown
  • 2 Tablespoons Raw Sugar
  • 1/2 Teaspoon Cinnamon
  • 1/3 Cups GF Flour
  • 2 Tablespoons Butter cold
  • 2 Apples Peeled and diced small.

Instructions
 

  • Mix together applesauce, butter, eggs and honey.
    In a separate bowl combine flour, salt, soda, powder and cinnamon.
    Combine all together, and then gently stir in apples. Set aside.
    In another bowl combine topping ingredients using a fork to mix the butter in until crumbly.
    Spray muffin tins, fill cups 3/4 full and top with a spoonful of topping.
    Bake at 350 for 20 min or until centers have set and a toothpick inserted into the center comes out clean.
