Gluten free apple cinnamon muffins are perfect if you’re looking for a quick grab and go breakfast! They are perfectly moist, with chunks of apple and a streusel topping that makes it feel more like a treat!
Apple-cinnamon may be a bit of a fall-sounding flavor, but I’ll be honest…we crave and eat muffins all year long in our home- this recipe especially! Nothing like a warm muffin, fresh from the oven with a crumbly, yummy streusel on top.
Gluten Free Apple Cinnamon Muffins All Year Long
If you’re a busy mama like me, making muffins ahead of time for breakfast or an afternoon snack can also be a perfect option! We make them and eat on them for a couple days, and then repeat with this muffin or another recipe.
This recipe is gluten free! After a good year or two (possibly longer) of dealing with (what I didn’t realize were) gluten sensitivity symptoms, I have cut it our of my diet for the foreseeable future. So gluten free it is! (I can do an actual blog post on this someday, but we discovered through our naturopathic doctor that those symptoms were in fact from gluten.)
Going Gluten Free
Gluten itself, especially the current genetically altered, highly-processed gluten, is very inflammatory to your body when you consume it. Limiting your consumption and choosing to add in gluten free options or grains that are more easily digestible – think sourdough/oats/ancient grains – can help you keep your body from inflammation.
So whether or not you are consciously choosing to eat solely a gluten free diet, like myself, wanting to limit your intake, or even just wanting to try these muffins, this recipe is perfect for you!
Ingridients
• Apple sauce. I make my own and freeze! Its soooo easy to do. Ill share my recipe here soon. If you don’t make your own you can always buy unsweetened.
• Butter. Grass fed is best!
• Eggs. We love our farm fresh eggs our chickens give ye.
• Honey
• Vanilla
• Gluten Free Flour. I’m definitely not a gluten free flour master, since I’m just beginning my GF journey, but I do enjoy Bob Mills Gluten Free 1/1 ratio flour.
• Salt
• Baking soda
• Baking powder
• Cinnamon
• Brown sugar.
• Raw sugar. We don’t eat a ton of refined sugar in our home, but when I do use it I use organic raw sugar.
• Apples. Peeled and diced small.
How to make Gluten Free Apple Cinnamon Muffins
Preheat oven to 350.
In a mixing bowl combine 1 1/2 cups applesauce, 1/3 cup melted butter, 2 eggs and 1/2 cup honey.
In a separate bowl combine 1 1/2 cups (1/1 ratio gluten free) flour, 1/4 teaspoon salt, 1 teaspoon baking soda, 1/2 teaspoon baking powder and 1 tablespoon cinnamon.
Combine both mixtures together until just mixed, and then gently stir in apples.
For the topping combine 1/4 cup brown sugar, 2 tablespoons raw sugar, 1/2 teaspoon cinnamon, 1/3 cup gluten free flour.
Then with a fork or your fingers mix 2 tablespoons cold butter into the topping mixture and combine until crumbly.
Spray your muffin tins.
Fill muffin tins 3/4 full and top with a good spoonful of topping.
Bake at 350 for 20 min, making sure to remove when centers have set/or a toothpick comes out clean.
I do a little tap on the top of the muffins looking for a springy top – no doughy-ness.
And enjoy!
